Serves 4
Ingredients
4 x 6oz pieces john dory fillet
zest of 1 orange
zest of 1 lemon
½tsp ground fennel seed
½tsp ground cumin
1 tbsp lime marmalade
1 mango
1 large tomato
1 small red onion
2tbsp chopped coriander
4 tbsp olive oil
juice 4 limes
salt & pepper
Cut the mango, tomato and red onion into small dice.
Slice the chilli into little rings and mix all ingredients together in a bowl.
Allow to marinate at room temperature
Mix together the orange and lemon zests with the marmalade and the spices.
Squeeze in a little of the juices and mix well.
Add the fish and allow to marinate for 20 minutes.
Cook on the barbeque and serve with the salsa.
