Serves 4
Ingredients
1 large mango, peeled and cut from the stone
75ml cold water
1 clove of garlic, crushed
1 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
1/2 red chilli, seeded and finely chopped
Juice of 1 lime
4 slices of Prosciutto
2 sprigs of fresh tarragon
Cut the mango into 1/2 inch thick slices and place them in a bowl. In another bowl, mix the water, garlic, salt, pepper, chilli and lime and pour them over the mango. Cover and refrigerate for at least 30 minutes or, preferably, for 24 hours.
Cut slices of Prosciutto in half, length ways and place them on a work surface. Place 1 slice of mango and a tarragon leaf on each piece and roll up. Serve at once.
