Mango Meringue Crush

Mango Meringue Crush
Preparation time: 15 minutes
Serves 4 people
A quick and easy dessert

Ingredients
2 medium, ripe mangoes roughly chopped
500g fresh double cream
4 meringues, roughly crumbled
4 passion fruit
*a dash of rum/coconut liquor can be added to the cream for an extra kick!

For garnish: Toasted shaving of coconut or desiccated grated zest of lime I tablespoon brown sugar / optional pulp from two passion fruit.

To Make: Place the chopped mangoes with the cream in a blender for a few seconds for a roughly blended mixture. Fold in the pulp from two passion fruits. This can be kept chilled till ready to serve.

To Serve: Pour the chilled mango cream in a desert glass and make alternate layers with the chunks of roughly crumbled meringues. Top with passion fruit pulp, coconut, grated lime zest and a sprinkle of brown sugar. Serve chilled.
