Emma Crowhurst's Grilled Caramelised Mango with Lime and Yoghurt
Serves 2

Ingredients
1 ripe mango
1 lime
1 tablespoon caster sugar
4 tablespoons Greek yoghurt

Pre heat the grill or have a blow torch ready.

Peel a mango by cutting off the top and bottom then peeling down the sides without too much waste. Slice the mango into nice big slices and arrange on a baking sheet.

Sprinkle the slices with sugar on one side only. Place under the grill or use the blowtorch to caramelise the fruit.

Arrange the mango in overlapping slices on two plates. Make 2 lime wedges and squeeze the remaining limejuice around the fruit and serve with the yoghurt.
